With over 3 million vegetarians in the UK, many of you are opting for the nut roast as a healthy and cost-effective to the traditional turkey. Keep reading for our recommendations to make the most of your leftovers to keep both your tummies and bank accounts full. 

1. Fry up into a burger: take apart your nut roast, -press into patties add a little water, douse in a pan with oil until crisp. Perhaps add a slice of American-style cheese at the end of the cooking process to melt the cheese before adding to the burger or cubes of Halloumi to the patty itself.

2. Not quite bangers and mash: like the burger concept, reshaping and frying the nut roast into sausage-like cylinders can be a welcome refresh. And this time, the question of moisture is answered with a humble baked bean, tins of which are both filling and cheap.  

3. Make a winter salad: try crumbling up your roast and adding to the top of a winter salad for a bit of extra texture. Using greens such as spinach is a good way to build the salad and adding lentils or chickpeas are a great source of protein . For a winter salad, yogurt can be the base of a delicious dressing, with a little citrus thrown in.

4. Stuff vegetables: if you are doubling down on the healthy aspect of the nut roast, stuffing a vegetable such as a pepper can be a delicious way to use up what you have. For a low-cost easy lunch, re-roast the nuts in your choice of vegetable vessel and dip the finished product in houmous. 

5. Make a soup: if you're looking for a last-ditch attempt to use up your nut roast for an additional meal, try adding to a soup. Blending up winter greens like spinach or broccoli make for a soup that's savoury and healthy in equal measure.
